Food Allergens

Food allergens can pose a significant risk for individuals with allergies. Allergens, primarily proteins, often cause the immune system to react as if they are harmful, leading to IgE-mediated or non-IgE-mediated immune reactions. In some cases, these reactions can be life-threatening. It's crucial to identify and manage allergens and their risk to ensure food safety and prevent health complications for allergic consumers.

Food allergens are typically naturally-occurring proteins in foods or derivatives of them that cause abnormal immune responses. Among the most common causes of allergies are some of the following food groups:

  • food allergenes
  • Seeds and nuts - the most common is peanut allergy. This allergy can cause serious consequences, especially in children, but often disappears with age. The following tree nuts have high allergenic potential: walnuts, hazelnuts, almonds, some exotic nuts, and seeds - sesame and poppy seed;
  • Eggs - affect on average 2% of children, but symptoms of allergy often do not appear after five years of age;
  • Milk and dairy products - a very common cause of food allergies, especially in children. About 10% of allergic children are sensitive to beef. It contains the same protein that is found in milk.
  • Other common food allergies include susceptibility to soybeans, wheat, fish, seafood, fruits, spices, synthetic and natural colors and chemical additives.
